2 Table Spoons Zesty Zinga
1 Large Ripe Avocado - Smashed
2 Tablespoons Wattos Aussie Bush Blend or Wattos Smokin Jo's (however you really can use any of the Wattos Rubs for the vegetables)
150gr Pumpkin - Diced (I like Blue - but use what you have and like)
2 Shallots or 1 Brown Onion - Sliced
1 Small Capsicum
6 Button Mushrooms (or what ever you have)
6 Cherry Tomato's
Small handful Feta Cheese
You can add corn of course (I didn't have any)
2 x Tortilla - Tip Use good quality or make them! The long life ones bought at the supermarket I find taste like plastic.
Method
Add Zesty Zinga to the Avocado and smash (set aside it would be good to do this about an hour before serving to allow the flavour to settle)
Steam the pumpkin until its soft
Add which ever Wattos rub you have chosen - I used Smokin Jo's which gave the Quesadilla a fantastic smoky flavour.
Stir fry vegies in oil or butter until they are tender
Remove vegetables from fry pan allow the pan to cool and wipe clean.
Place tortilla in the pan
add Zesty Zinga Avo to half the tortilla
Place vegetables and Fetta to the same half - fold in half and cook with NO oil and on low to medium - I cover mine to give the cheese a chance to melt.
You can use a sandwich or panini press if you have them - I prefer the pan as I don't like it squashed and I can control the heat.
