1kg chicken Drumettes or thighs (I have used thigh)
100g Watto's Smokehouse Spinnin Chicken rub (use more if you need it see notes)
1/4 cup oil (I use vegetable oil)
Method
Light the fire to create your charcoal about an hour ahead of time - you don't want flame.
Oil up the drumettes or thighs - be generous with the oil - you want to see those legs glistening. (I suggest a pair of gloves and get in there, you wont regret it - this is where those yummy gnarly bits will come from)
Sprinkle a bit over half the Watto's Smokehouse Spinnin Chicken rub (again you can use any Watto's Smokehouse rub but this one is great for over the charcoal or a hot oven)
Get into all those nooks and crannies! Place your legs back into the fridge and leave for about and hour (over night is awesome too)
5 - 10 minutes before you are ready to cook add the rest of the rub. Again using the gloves and ensuring you cover all the chicken. If you like salty goodness you may want to add more rub Note: this will make the chicken salty.
Using an Oven
Preheat oven at 180 - 200 degrees (Place your heavy based tray in the oven)
Remove your baking tray from the oven and place your legs in the tray. Sizzle them on both sides. This helps seal the chicken so you get a good crispy skin but moist flesh (yes I did just used that word !)
15 to 20 minutes in gas or fan force. you should see the outside a go nice and golden/redish
Air Fryer
Yep this is perfect for the air fryer! spray your basket with cooking spray and place chicken in the basket - Mine is 180 at 12 min the first round - I shake it up and put it back in for another 2 - 5 min (all air fryers are different so use yours according to your manual)
Charcoal
place the legs in a basket or on the rack over charcoal - sear on both sides then let those "flare ups" gnarl up the skin and create salty goodness. Cook for out 10 minutes continually "spinnin"
