1 x Chicken breast (I thinned mine out to three pieces)
1/2 cup bread crumbs (Use what you like I used store bought, you can use panko or home made)
1/2 cup Aussie Bush Blend Rub (maybe a bit more for heaps of flavour)
1 egg
Oil for shallow frying - I use coconut or vegetable for crunchiness, but you really can use what ever you prefer or have in the pantry
Salad - I used ice burg lettuce and tomato only - you can make these as fancy as you like!
2 buns or bread - what ever you prefer - this recipe is great for wraps too
Sauce
3 Table spoons whole egg mayo (or what ever you prefer)
1 - 2 Tablespoons Wattos Aussie Blend Rub (or more to taste)
Method
Mix bread crumbs and 1/2 Cup Wattos Aussie Bush Blend in a bowl and stir up well.
Crack egg and whisk
Mix Mayo and 1- 2 Tbl Wattos Aussie bush blend rub and let sit while you cook the schnity - Add more mayo or Wattos Aussie Bush Blend rub to your taste
Thin out or cut your breast as desired
Dip chicken breast in egg, place the chicken into coating mixture

Note: This is tricky so you need hot oil to cook the schnity and to ensure the schnity is crunchy - Too much heat will make your crumb mixture burn without cooking the chicken - Not enough heat will just soak up the oil and leave your schnity soggy. So this is where you know best, you know your cook top so do what you think is right. I have gas which tends to cook quicker than electric so I go medium heat. My best advise is you should see bubbles when you place the schnity in the oil, if its spitting at you its too hot. Sprinkle some left over coating in the oil to test
Throw your schnity into the oil and cook as above
Rest your chicken on paper towel to rest and drain the oil
Assemble your burger, sandwich or wrap.
