The history of Watto's Smokehouse
Watto's Smokehouse was founded by Jodie & Sean Watson in 2011. We have always been passionate about cooking and had a particular interest in smoking meats for curing along with creating unique flavours.Jodie began experimenting with different blends of herbs and spices to create the perfect flavours for Seans smoked meats, and soon their family & friends were asking them to make rubs for them too. Jodie & Sean quickly realized that there was a demand for high-quality spice blends, and so they started Watto's Smokehouse. Watto's Flavouresome blend recipes
Watto's rubs are incredibly versatile and can be used in so many different ways. Here are just a few of our favorite recipes that use Watto's spice blends:
### Bad Boy BBQ Ribs
Ingredients:
- 2 racks of pork ribs
-1/4 cup dark brown sugar
- 1/4 cup of Bad Boy BBQ Rub
-750ml bottle of ginger beer
Instructions:
1. Preheat your oven to 120°C (this can be gas,electric,wood charcoal or pellet)
2. Apply the Bad Boy BBQ Rub to your pork ribs, making sure to coat them evenly.
3. Sprinkle the dark brown sugar over the coated ribs
4. Pour the Ginger beer into the baking dish
5. Place the ribs in the baking dish on top of the ginger beer carefully and cover with foil.
6. Bake for 2 hours, or until the meat is tender and falling off the bone.
7. remove foil and place the ribs back into a high heat for 5-10 minutes uncovered
7. Remove the tray , empty any liquid and brush the ribs with your favorite BBQ sauce the more the better
8. place the ribs back into a high heat for 5-10 minutes uncovered, or until the sauce is caramelized and sticky.
9. these are now ready to eat and deliver that mouthwatering meal.
### The Spinnin Chicken Skewers will make approx 4 good sized skewers
Ingredients:
- 2 full chicken breasts, cut into cubes ( make these a good size similar to a 50cent piece)
- 1/4 cup of Spinnin Chicken seasoned rub ( we also like Aussie Bush blend or Sweet Mutha Clucka)
- Wooden skewers (soak these in water before use ast they will burn) we use metal skewers
Instructions:
- mix your cubes with the desired rub, we usually add a dash of smoked olive oil
2.Preheat your BBQ or Grill to medium-high heat.
- Thread the seasoned chicken onto skewers.
- Grill the chicken skewers for 8-10 minutes, or until the chicken is cooked through.
- Serve with your favorite dipping sauce. Check out our recipe with the Zesty Zinga dip/sauce
### Aussie Bush Blend Roasted Vegetables
Ingredients:
- 2 cups of mixed vegetables (such as carrots, zucchini, and bell peppers), cut into bite-sized pieces
- 1/4 cup of Aussie Bush Blend
- 2 tablespoons of smoked olive oil (we sometimes use coconut oil as well)
Instructions:
- Preheat your oven to 180°C.
- Toss the mixed vegetables with the Aussie Bush Blend and olive oil, making sure to coat them evenly.
- Spread the vegetables out on a baking sheet.
- Roast the vegetables for 20-25 minutes, or until they are tender and caramelized.
- Serve as a side dish with your favorite main course.
