Essential ingredients for a mini lamb roast
Before we dive into the cooking process, it's essential to choose the right ingredients. The right cut of lamb can make all the difference in the final product. A mini lamb roast typically weighs between 500g - 1kg and can be purchased at your local butcher or grocery store. When selecting a cut of lamb, look for one that is bright pink with a fine texture and a minimal amount of fat.
Once you have selected your lamb, grab some of your favourite vegetable , we like sweet potato,carrots,pumpkin and standard potatoes
we will be using the following ingredients from Watto's Smokehouse
Smoked Garlic cloves
Smoked olive oil
Smoked rosemary salt ( we also use some fresh rosemary from our garden )

Step-by-step instructions for preparing the lamb roast
Seasoning and Marinating the Lamb Roast & Vegetables
Preheat the oven to 180°C. also take your lamb out of the fridge to get to room temp
Peel & cut your veggies up into pieces and add Smoked olive oil & smoked rosemary salt in a bowl and cover your vegies with this.
grab your baking tray (tip put some baking paper in the base as it makes it easier for cleanup later)
lay out the veggies and approx 4-6 cloves of garlic on the tray in the middle place the cut carrots in a row in the middle of tray ( this is where you will place the lamb on later) drizzle a bit of honey on the carrots
put your veggies into the oven for 30 mins
In mortar and pestle, mix together the garlic, smoked olive oil & rosemary salt, (dice the garlic & some fresh rosemary as well)
Rub the marinade all over the lamb, making sure to coat it evenly.
Using a sharp knife stab some holes into the lamb, push a whole garlic clove into the hole along with a piece of fresh rosemary
Remove the veggies from the oven after 30mins and baste them with oil from the baking tray


place the mini roast on the carrots and put back into the oven for 30mins ( 30mins for a 500g piece, then add another 5 mins for each other 100g of lamb)
One of the most critical steps in cooking lamb is checking its doneness. To check the internal temperature of the lamb, insert a meat thermometer into the thickest part of the meat. The temperature should read 57°C for medium-rare or 63°C for medium. If the temperature is too low, return the lamb to the oven for a few more minutes.
when done take the tray out and remove the mini roast- cover the lamb in 2 layers of foil and allow to rest for 15 minutes
Baste the veggies again and place back into the oven for another 15-20mins
make yourself up a gravy while waiting if you like
